I came to Paleo through the world of Autoimmunity. I went from struggling with a variety of issues due to Celiac disease and a wide variety of symptoms that were leading me to wonder if “this is as good as it gets?” to weighing less in body and mind, dealing with only the occasional flare up of the autoimmune symptoms and realizing that things are only going to continue to get better.
I have a master’s degree in food science. I love to cook. I was a personal chef at one point in my life. Therefore I realize that making the changes to my daily fare that were necessary on the Autoimmune Protocol were a little more approachable for me than it might be for others.
