Breakfast Meatballs

When you are transitioning to Paleo or AIP Paleo from a standard American diet (SAD), one of the most difficult meals to reconfigure is breakfast.  We’ve all grown up with cereal, toast, pancakes, muffins, waffles, etc., etc.  Breakfast seems to be almost entirely grain-based, with the possible exception of a slice of bacon, ham or sausage here or there along with a fried egg.  Add in the milk, cheese and coffee and pretty much everything around breakfast becomes something you realize you need to avoid.

Skipping breakfast isn’t really an option.  Even though your body will learn to burn protein and fat more efficiently, by the time you’ve slept for the eight hours (we’ll talk more about sleep in another post!) you really need, you are definitely ready to break your fast.

I needed to come up with a recipe that was easy to make ahead of time (getting two kids ready for school and myself ready for work make mornings rushed to say the least), that can be warmed up quickly and be satisfying.  Enter breakfast meatballs.  They can be eaten in the car, not great for the digestion, I realize, but that’s a compromise I sometimes have to make.  They include some vegetable matter and are super tasty and satisfying.

Breakfast Meatballs

Prep Time: 25 mins
Cook Time: 25-30 mins
Yields: 30

Ingredients

  • 1 lb. grass fed ground beef
  • 1 lb. pastured ground pork
  • 2 strips precooked bacon, chopped
  • 2 strips precooked bacon, chopped
  • 1 cup frozen spinach thawed with juice squeezed out (save the juice to put into a smoothie or soup, there's still a lot of nutrition there!)
  • 1/2 cup onion diced and cooked until translucent
  • 1/2 cup onion diced and cooked until translucent
  • 1/4 cup chopped fresh parsley
  • 1/4 cup powdered pork rinds (place pork rinds in food processor or blender -- make sure they only contain pork skin and salt)

  • 2 tsp. salt
  • 1 tsp. dried sage
  • 1/2 tsp. garlic powder or 1 garlic clove minced

Method

  1. Preheat oven to 400 degrees F
  2. Mix everything together with hands or using the paddle attachment on a heavy duty mixer. You want the mixture to be pretty uniform.
  3. Create balls that are about 1 ½ inches in diameter. Place on parchment paper lined baking sheet with about an inch in between each. Bake in the oven for about 25 minutes, or until a deep brown.
  4. Store in covered container in the fridge. Warm up in the microwave, or on the stove using some reserved bacon grease in a pan.
