Avocado Ice Cream

When you remove dairy from your diet, as well as sugar, well, it seems like the days of enjoying a bowl of ice cream are over.

Not true!  Avocado based ice cream is a fantastic alternative that you can make easily. Once you have the basic recipe down, you can make all sorts of additions and flavors that you really enjoy.  Let me know what some of your favorite flavors of avocado ice cream are.  I like pineapple-lime.  It’s almost like a pina colada!

Avocado Ice Cream

Prep Time: 15 mins
Yields: 3 cups

  • 3 very ripe avocados
  • 1 can full fat coconut milk
  • 2 tbsp. lime juice
  • 1/2 tsp. salt
  • 5 pitted dates

  1. Put all ingredients in the bowl of your food processor.
  2. Mix with the S blade until uniform. The consistency will be smooth and creamy, thick like a cake batter.
  3. Place in bowl to add any additional flavorings you may want. Chunks of fruit, coconut flakes, pieces of dark chocolate (not for AIP however), nuts (also not AIP) or maple syrup for that caramel type of taste
  4. Place mix in in your ice cream maker (if you have one) and turn on. The mix will freeze to a similar consistency to other home made ice creams. In other words, when you put in your freezer after having enjoyed the first bowl or two, it will freeze pretty rock solid.
  5. If you don't have an ice cream maker, you can place in a shallow dish and put the dish in the freezer. Every half hour or so, stir the mix and place back in freezer. Do this until you acheive the consistency you desire. It takes longer, but the results are still quite delish.
